Fried food tastes so good. It is a treat for me occasionally. We all know that it is not the healthiest food. But how do we make it healthier?
In food chemistry we learn that different oil has different smoking temperature. Also, the higher the temperature is, the less oil the food absorbs. Therefore, it will be healthier if we can use good oil with high smoking temperature and cook it in a very short time.
Peanut oil is a good candidate. It has a smoking temperature of 400 degree and from healthy nuts. With cooking temperature of 375 degree and very thin slices, here is the result. They are crunchy!
